You make these moist and delicious gluten-free snack cakes by adding eggs, oil and either canned pumpkin, unsweetened applesauce, mashed bananas, canned sweet potatoes, or shredded zucchini. Serve plain, sprinkled with powdered sugar, or frosted with cream cheese icing.  No one will ever know these are gluten-free!
